I would say to keep it on SBS for production, but on a lab just disable the dhcp service will work fine. I don't understand why you want to unauthorize it. But I think it has something to do with the complete integration of the SBS configuration, everything is bind to each other so unauthorizing dhcp would break the wizards and because of that it would not be possible. I would to start look at the event logs for errors and warnings and run the Fix my Network wizard.
I got my own dhcp and i dont want conflicts between my own dhcp and the new environments dhcp. Never tried to unauthorize the dhcp, on my lab environment I just disabled the dhcp service.
